MEET OLI

Oli is our classically trained chef & owner. Having worked in the catering and hospitality industry for the last 17 years, spending a large portion of this working in Italian restaurants, he has become a real stickler for premium quality ingredients that offer Italian authenticity and he just happens to be a passionate pizza lover too.

OUR PIZZA

HAND STRETCHED DOUGH

At the Pizza Trail, we specialise in Neapolitan style dough. This is matured for 48 hours to heighten the dough’s flavour and texture to give a wondrous tasting dough that will  give a pillowy light crust

FRESH INGREDIENTS

We pride ourselves on using the very best imported Italian produce and the very best of local produce. We use only the best Fior di Latte mozzarella and San Marzano tomatoes

WOOD FIRED OVEN

Our Esposito Forni traditional wood fired oven cooks at 400 degrees for a mouth watering traditional Leopard spotted crust with that authentic wood fired flavour in under 3 minutes
